Overview
As the global need to innovate and to sustainably feed our planet becomes an imperative, science and technology will be essential in helping to solve this global food challenge. And one of these solutions could be with 3D printing technology, which is not new, though it is usually associated with creating materials to build cars, planes and houses. But after Russian cosmonauts printed meat in space showing how useful the applications of 3D printing can be food printing has gained traction.
In this session, join our panellists as they discuss the world of food printing and how printed meals may become the future of food.

Speakers' Profiles:
Elzelinde van Doleweerd, Creative Director and Founder, Upprinting Food
Mrs Elzelinde van Doleweerd graduated with a Bachelor of Science in Industrial Design at the Eindhoven University of Technology in 2018. During her Bachelor's Degree, she pursued a Minor in Food Technology at Wageningen University and Research. She graduated with the project Upprinting Food, which is aimed at reducing food waste in combination with 3D printing technology.
After her graduation, the project received worldwide attention and continued as a startup with a focus on high-end restaurants. Additionally, Elzelinde is doing her Master's in Industrial Design, where she develops herself in entrepreneurship, in combination with food, sustainability and technology. Her dream is to start a sustainability-focused restaurant in which 3D printing and other new technologies will be used alongside traditional techniques, to reduce food waste and provide guests with a beautiful experience.
Dr Lee Mun Wai, Senior Technical Lead - FMCG Cluster, Advanced Remanufacturing and Technology Centre (ARTC) at A*STAR
Dr Lee Mun Wai is a Senior Technical Lead in the Fast-moving Consumer Goods (FMCG) cluster in ARTC at A*STAR. Her current research areas pertain to developing capabilities for Batch Size One manufacturing for product hyper-personalisation. Prior to joining ARTC, Mun Wai was working as a Senior Manager in the Food & Innovation Resource Centre where she led several areas of R&D, such as personalised nutrition through 3D food printing and green packaging.
She received her PhD from Nanyang Technological University and has more than 20 years of experience working on polymers and sustainable materials development, helping food companies in establishing competencies in food manufacturing and packaging capabilities.
